2 tablespoons olive oil 1 medium yellow onion, chopped 2 carrots, sliced 2 celery stalks, sliced 3 cloves garlic, minced 8 cups low-sodium chicken broth 1 ½ pounds boneless, skinless chicken breasts or thighs 2 bay leaves 2 cups egg noodles ¼ cup fresh parsley, chopped Salt and black pepper, to taste

Ingredients
Heat olive oil in a large pot over medium heat. Add chopped onions, carrots, and celery. Cook until softened, about 5–7 minutes.
Stir in minced garlic and cook for 1 more minute until fragrant.
Pour in chicken broth, add chicken and bay leaves. Bring to a boil, then reduce to a simmer for 20–25 minutes or until chicken is cooked through.
Remove chicken, shred with forks, and set aside. Discard bay leaves.
