Taco Pasta Salad You’ll Crave All Summer Long

1 pound rotini pasta 1 pound ground beef 2 tablespoons taco seasoning 1 cup cherry tomatoes, halved 1 cup black beans, drained and rinsed 1 cup corn kernels 1 small red onion, thinly sliced 1 cup shredded cheddar cheese 1⁄2 cup sour cream 1⁄2 cup mayonnaise 2 tablespoons lime juice 1⁄4 cup chopped fresh cilantro

Step 1

Bring a large pot of salted water to a boil. Cook the rotini pasta until al dente, then drain and rinse under cold water. Set aside to cool.

In a skillet over medium heat, cook ground beef until browned. Stir in taco seasoning and a splash of water. Simmer for a few minutes, then remove from heat and let cool.
