Ingredients
1.5 lbs chicken thighs
1 large onion, chopped
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
2 tablespoons curry powder
1 teaspoon turmeric
1 teaspoon paprika
0.5 teaspoon cinnamon
2 tablespoons tomato paste
1 can (13.5 oz) coconut milk
1 cup chicken broth
1.5 teaspoons salt
0.5 teaspoon black pepper
2 tablespoons vegetable oil
Fresh cilantro for garnish (optional)
Instructions
1. Season the chicken with salt and pepper, then sear in hot oil until browned on both sides. Remove and set aside.
2. In the same pot, sauté chopped onion until soft. Add garlic and ginger, cook until fragrant.
3. Stir in curry powder, turmeric, paprika, and cinnamon. Toast the spices for 1 minute.
4. Mix in tomato paste and cook for 2 minutes. Pour in coconut milk and chicken broth, stirring to combine.
5. Return the chicken to the pot. Cover and simmer on low heat for 30 minutes until chicken is cooked through.
6. Adjust seasoning if needed. Serve hot over rice and garnish with cilantro if desired.
