Description
A warm, hearty African Peanut Soup made with creamy peanut butter, sweet potatoes, tomatoes, and spices. This comforting West African-inspired soup is rich in flavor, naturally gluten-free, and perfect for cozy weeknight dinners. Great as a vegan or vegetarian option too!
Ingredients
2 tablespoons olive oil
1 medium onion, chopped
3 cloves garlic, minced
1 tablespoon fresh ginger, grated (or 1 teaspoon ground ginger)
2 carrots, sliced
2 medium sweet potatoes, peeled and cubed
1 can (14.5 oz) diced tomatoes
2 tablespoons tomato paste
4 cups vegetable broth
1 cup creamy peanut butter
1 teaspoon cayenne pepper (adjust to taste)
1 teaspoon salt
1/2 teaspoon black pepper
2 cups chopped collard greens or kale
Instructions
1. Heat olive oil in a large pot over medium heat. Add chopped onion and cook for about 5 minutes until softened.
2. Stir in minced garlic and ginger, and cook until fragrant, about 1 minute.
3. Add carrots, sweet potatoes, diced tomatoes, and tomato paste. Stir everything together and cook for 2 more minutes.
4. Pour in the vegetable broth, bring to a boil, then reduce heat and let simmer for 20 minutes or until vegetables are tender.
5. Stir in the peanut butter and cayenne pepper. Mix well until smooth and creamy.
6. Add the collard greens or kale and simmer for another 5 to 10 minutes until greens are softened.
7. Season with salt and black pepper to taste.
8. Serve hot as-is or with rice, naan, or flatbread.
Notes
Use natural, unsweetened peanut butter to better control the soupโs flavor.
For a spicier kick, increase cayenne pepper or add a pinch of chili flakes.
Make it a complete meal by serving it over jasmine rice or with warm flatbread.
