Description

Ingredients

10 cups popped popcorn

1 cup brown sugar

½ cup unsalted butter

¼ cup light corn syrup

½ teaspoon salt

½ teaspoon baking soda

1 teaspoon vanilla extract


Instructions

1. Pop the popcorn and place it in a large, heatproof bowl. Remove all unpopped kernels.

2. In a saucepan, melt the butter over medium heat. Add brown sugar, corn syrup, and salt. Stir until smooth.

3. Let the mixture boil for 4 to 5 minutes without stirring.

4. Remove from heat and quickly stir in baking soda and vanilla extract. The mixture will foam.

5. Pour the caramel over the popcorn and stir immediately to coat all pieces evenly.

6. Spread the coated popcorn onto a parchment-lined baking sheet.

7. Bake at 250°F for 45 minutes, stirring every 15 minutes.

8. Remove from oven, let cool completely, then break into chunks.

9. Store in an airtight container at room temperature.
