Ingredients
1 cup granulated sugar
1 cup buttermilk
2 cups all-purpose flour
1 teaspoon baking soda
1 egg
1/2 cup butter, softened
1/3 cup granulated sugar (for cinnamon swirl)
1 teaspoon ground cinnamon
Instructions
1. Preheat oven to 350°F and grease a loaf pan.
2. In a large bowl, cream together 1 cup granulated sugar and butter until light and fluffy.
3. Beat in the egg and then stir in the buttermilk until smooth.
4. In another bowl, whisk together flour and baking soda.
5. Gradually mix dry ingredients into wet ingredients until just combined.
6. In a small bowl, mix 1/3 cup sugar and 1 teaspoon cinnamon.
7. Pour half the batter into the loaf pan, sprinkle half of the cinnamon mixture on top.
8. Add the rest of the batter and top with remaining cinnamon sugar. Swirl lightly with a knife.
9. Bake for 50–60 minutes, or until a toothpick comes out clean.
10. Cool in pan for 10 minutes before transferring to a wire rack.
Notes
This bread can be frozen in slices for quick treats.
For a deeper flavor, swap white sugar for brown in the swirl.
Add a simple vanilla glaze for extra sweetness.
