Ingredients
1 lb ground beef
1 medium onion, chopped
2 cloves garlic, minced
2 cups frozen mixed vegetables
2 cups diced potatoes
4 cups beef broth
2 cups milk
4 oz cream cheese
1 tsp salt
1/2 tsp black pepper
Instructions
1. In a large pot over medium heat, cook ground beef until browned. Add onion and garlic, cook until onion is soft.
2. Pour in beef broth, add diced potatoes and frozen vegetables. Bring to a simmer.
3. Cook for about 20 minutes, or until potatoes are tender.
4. Reduce heat to low. Stir in milk and cream cheese until melted and smooth.
5. Season with salt and pepper to taste.
6. Serve hot with bread or biscuits.
Notes
Use ground turkey or chicken for a leaner version.
Freeze leftovers in airtight containers for up to 2 months.
