This Amish Sunday Savior Casserole is a hearty, comforting meal layered with sliced potatoes, savory sausage, creamy mushroom soup, and gooey cheddar cheese. It’s a perfect Sunday dinner recipe, easy to prep and loved by the whole family. Great for meal prep, potlucks, and cozy weeknights.
Ingredients
2 pounds potatoes
1 pound ground sausage
1 can (10.5 oz) cream of mushroom soup
1 cup sour cream
2 cups shredded cheddar cheese
1 small onion
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon butter
Instructions
1. Peel and thinly slice the potatoes. Dice the onion.
2. In a skillet, cook the sausage over medium heat until browned and crumbly. Remove from heat.
3. Sauté diced onion in butter until soft and translucent.
4. In a large mixing bowl, combine cream of mushroom soup, sour cream, and 1 cup of shredded cheddar cheese.
5. Stir in cooked sausage and sautéed onions. Season with salt and pepper.
6. Grease a 9×13 baking dish. Layer half of the potatoes on the bottom.
7. Spread half of the sausage mixture over the potatoes.
8. Repeat the layers with remaining potatoes and sausage mixture.
9. Sprinkle the remaining 1 cup of cheese evenly on top.
10. Cover with foil and bake at 375°F for 45 minutes.
11. Uncover and bake an additional 15 minutes until golden and bubbly.
12. Let rest for 10 minutes before serving.
Notes
This casserole can be assembled ahead and refrigerated overnight.
For added color and flavor, toss in some chopped bell peppers or parsley.
To make it spicier, use hot sausage or add crushed red pepper.
