Ingredients

2 pounds butternut squash, peeled and cubed

2 medium apples, sliced (Granny Smith or Honeycrisp)

2 tablespoons olive oil

1 teaspoon ground cinnamon

1 teaspoon salt

1⁄2 teaspoon ground nutmeg

3 tablespoons maple syrup

1⁄2 cup rolled oats

1⁄2 cup chopped pecans

1⁄4 cup brown sugar

3 tablespoons unsalted butter, melted


Instructions

1. Preheat oven to 400°F. Toss butternut squash and apples with olive oil, cinnamon, and salt. Spread on a baking sheet and roast for 25–30 minutes until tender and lightly caramelized.

2. Lower oven to 350°F. In a small bowl, mix rolled oats, chopped pecans, brown sugar, and melted butter until well combined.

3. Transfer roasted squash and apples to a casserole dish. Drizzle with maple syrup and sprinkle with nutmeg. Mix gently to combine.

4. Evenly sprinkle the oat-pecan topping over the casserole.

5. Bake uncovered for 25–30 minutes, until topping is golden brown and edges are bubbling.

6. Let rest for 5–10 minutes before serving.
