Description

Ingredients

1 1/2 cups graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

3 8-ounce packages cream cheese, softened

3/4 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1/2 cup sour cream

2 cups peeled and diced apples (Granny Smith or mix)

1/3 cup brown sugar

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1 tablespoon cornstarch

3/4 cup all-purpose flour

1/2 cup brown sugar

1/2 cup old-fashioned oats

1/2 cup unsalted butter, cold and cubed

1/2 teaspoon ground cinnamon


Instructions

1. Preheat oven to 325°F (163°C). Mix graham cracker crumbs, sugar, and melted butter until combined. Press into bottom of a springform pan and bake for 8–10 minutes. Let cool.

2. In a large bowl, beat softened cream cheese until smooth. Add sugar and vanilla, and mix until creamy. Add eggs one at a time. Stir in sour cream. Pour over cooled crust.

3. In a skillet, cook diced apples with brown sugar, cinnamon, nutmeg, and cornstarch over medium heat for 5–7 minutes until slightly softened and thickened. Let cool. Spread over cheesecake filling.

4. In a bowl, combine flour, brown sugar, oats, and cinnamon. Cut in cold butter until coarse crumbs form. Sprinkle over apple layer.

5. Place pan on a baking sheet and bake for 60–70 minutes until center is set but slightly jiggly. Turn oven off, crack door, and let cool for 1 hour. Refrigerate for 4 hours or overnight. Slice and serve.

Notes

This cheesecake must be fully chilled before slicing for clean cuts.

Use a mix of tart and sweet apples for best flavor balance.

For added flair, drizzle with caramel sauce or top with whipped cream.
