Ingredients
1 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
3/4 cup milk
1 large egg
1 teaspoon vanilla extract
2 tablespoons melted butter
1 large apple, diced
2 tablespoons brown sugar
1 teaspoon butter (for cooking apples)
Instructions
1. In a skillet over medium heat, melt 1 teaspoon of butter. Add the diced apples, brown sugar, and a dash of cinnamon. Cook for 4โ5 minutes until soft and caramelized. Set aside to cool.
2. In a mixing bowl, combine flour, baking powder, cinnamon, and salt.
3. In another bowl, whisk together milk, egg, vanilla extract, and melted butter.
4. Pour the wet mixture into the dry ingredients and stir gently. Avoid overmixing; lumps are okay.
5. Fold in the cooled caramelized apples evenly throughout the batter.
6. Heat a non-stick skillet or griddle over medium heat. Lightly grease it with oil or butter.
7. Scoop 1/4 cup of batter per pancake onto the skillet. Cook 2โ3 minutes until bubbles form, flip, then cook another 1โ2 minutes until golden.
8. Serve warm with butter, maple syrup, or additional caramelized apples on top.
