Ingredients
1 ½ cups all-purpose flour
1 tablespoon baking powder
¼ teaspoon salt
2 tablespoons sugar
2 large eggs
1 ¼ cups milk
¼ cup butter, melted
1 teaspoon vanilla extract
2 medium apples, peeled and chopped
¼ cup brown sugar
1 teaspoon ground cinnamon
⅛ teaspoon ground nutmeg
1 teaspoon lemon juice
1 tablespoon butter (for apple topping)
Instructions
1. In a saucepan over medium heat, melt 1 tablespoon of butter and add the chopped apples.
2. Stir in brown sugar, cinnamon, nutmeg, and lemon juice. Cook for 8–10 minutes until apples are soft and coated in syrup.
3. In a mixing bowl, combine flour, baking powder, salt, and sugar.
4. In a separate bowl, whisk together eggs, milk, melted butter, and vanilla extract.
5. Pour the wet ingredients into the dry ingredients and stir until just combined.
6. Preheat and grease the waffle maker according to the manufacturer’s instructions.
7. Pour enough batter to cover the waffle grid and cook for 3–5 minutes until golden and crisp.
