2 ½ cups all-purpose flour

6 tablespoons ice water

3 Granny Smith apples, peeled and sliced

2 Honeycrisp apples, peeled and sliced

½ cup granulated sugar

¼ cup brown sugar

1 teaspoon cinnamon

¼ teaspoon nutmeg

2 tablespoons cornstarch

1 tablespoon lemon juice

1 egg

1 tablespoon milk


Instructions

1. Grate the cheddar cheese and cut the butter into cubes. In a large bowl, mix flour and salt, then cut in butter and cheese until crumbly. Add ice water gradually until dough forms. Divide into two discs, wrap, and chill for 1 hour.

2. In another bowl, combine apple slices with granulated sugar, brown sugar, cinnamon, nutmeg, cornstarch, and lemon juice. Let sit for 10 minutes.

3. Preheat oven to 400°F. Roll out one dough disc into a 9-inch pie plate. Add the apple mixture. Top with second dough disc, seal and crimp edges, then cut steam slits.
