Ingredients
4 cod fillets (about 6 oz each)
3 tablespoons lemon juice
1 teaspoon lemon zest
3 garlic cloves, minced
4 tablespoons unsalted butter
1 tablespoon olive oil
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon paprika
2 tablespoons chopped fresh parsley
Instructions
1. Preheat oven to 400°F (200°C) and grease or line a baking dish with foil.
2. In a saucepan over medium heat, melt butter, then add olive oil and minced garlic. Sauté until fragrant.
3. Stir in lemon juice, zest, salt, and pepper. Remove from heat.
4. Place cod fillets in the baking dish. Season with salt, pepper, and paprika.
5. Pour the lemon-garlic butter sauce evenly over the fish.
6. Bake uncovered for 12 to 15 minutes or until the fish flakes easily with a fork.
