Ingredients
2 large yellow onions
1 cup shredded Asiago cheese
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon fresh thyme (optional)
Instructions
1. Preheat your oven to 400°F (200°C). Slice the onions in half from root to tip and remove the papery outer skin. Trim the roots slightly so they sit flat.
2. Place the onion halves cut-side up in a baking dish. Drizzle with olive oil, making sure it gets between the layers. Season with salt, pepper, and thyme if using.
3. Cover the baking dish with foil and roast for 35–40 minutes until the onions are tender. Remove the foil and roast uncovered for another 10–15 minutes until golden.
4. Top each onion half with shredded Asiago cheese. Return to the oven and bake uncovered for 10 minutes until the cheese is melted and golden.
5. Let cool slightly before serving. Serve warm for best flavor and texture.
