Ingredients
1 tablespoon olive oil
4 boneless skinless chicken breasts
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup basil pesto
2 Roma tomatoes sliced
1 cup shredded mozzarella cheese
Instructions
1. Preheat your oven to 400°F. Lightly grease a baking dish with olive oil.
2. Place chicken breasts into the baking dish. Pat them dry with paper towels. Season both sides with salt and pepper.
3. Spread basil pesto generously over each piece of chicken, making sure to coat the tops evenly.
4. Add slices of Roma tomatoes on top of the pesto-covered chicken.
5. Sprinkle shredded mozzarella cheese evenly over the tomatoes.
6. Bake uncovered for 25 to 30 minutes, or until the chicken reaches 165°F internally and the cheese is melted and lightly browned.
7. Remove from the oven and let rest for 5 minutes before serving.

Use fresh mozzarella slices for extra gooey melt.
