Ingredients
1 medium zucchini
2 large eggs
1/2 cup all-purpose flour
3/4 cup Italian-style breadcrumbs
1/3 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
Olive oil spray
Instructions
1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. Cut the zucchini into sticks about 3 inches long, and pat them dry.
3. Prepare three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs, Parmesan, salt, pepper, and garlic powder.
4. Dredge each zucchini stick in flour, dip into egg, then coat in the breadcrumb mixture.
5. Place each coated fry on the baking sheet and lightly spray with olive oil spray.
6. Bake for 20–25 minutes, flipping halfway, until golden and crispy.
7. Serve hot with your favorite dipping sauce like ranch, marinara, or spicy aioli.
Notes
Always pat the zucchini dry before coating to help the breading stick.
For extra crunch, use panko instead of regular breadcrumbs.
Best served fresh, but can be reheated in an air fryer.
