Ingredients
2 lbs chicken breast, cut into bite-size pieces
1 cup mayonnaise
1/2 cup sweet chili sauce
2 tablespoons sriracha
1 tablespoon honey
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup panko breadcrumbs
2 stalks green onions, chopped for garnish
Instructions
1. Preheat oven to 400°F and grease a 9×13-inch baking dish.
2. Cut chicken breasts into bite-sized pieces. Season with salt, pepper, and garlic powder. Add to the baking dish in a single layer.
3. In a bowl, mix together mayonnaise, sweet chili sauce, sriracha, and honey until smooth.
4. Pour sauce over chicken and stir to evenly coat all pieces.
5. Sprinkle panko breadcrumbs over the top, pressing lightly so they stick.
6. Bake uncovered for 25 to 30 minutes, or until chicken is cooked through and top is golden and bubbly.
7. Let rest for 5 minutes before garnishing with chopped green onions.
8. Serve hot with rice, noodles, or a side salad.
Notes
Use a meat thermometer to ensure chicken reaches 165°F internally.
Adjust sriracha to taste depending on spice preference.
Panko is key for crunch; don’t skip it.
