Description

This Beef and Pepper Rice Bowls recipe is a quick and easy dinner idea featuring tender beef, colorful bell peppers, and a savory soy glaze over fluffy rice. Perfect for busy weeknights, itโ€™s a flavorful, healthy, and satisfying one-pan meal.


Ingredients

1 pound flank steak

2 bell peppers

1 medium onion

3 cloves garlic

1/4 cup low-sodium soy sauce (or tamari)

1 tablespoon brown sugar

1 tablespoon cornstarch

1/2 teaspoon ground black pepper

3 cups cooked white or jasmine rice

1 teaspoon sesame oil

1 tablespoon olive oil


Instructions

1. Slice the flank steak thinly against the grain. Core and slice the bell peppers, thinly slice the onion, and mince the garlic.

2. In a bowl, whisk together soy sauce, brown sugar, cornstarch, minced garlic, black pepper, and sesame oil.

3. Heat olive oil in a skillet over medium-high heat. Cook the beef until browned and cooked through. Remove from skillet.

4. In the same skillet, cook onions and bell peppers until softened but still vibrant, about 5 minutes.

5. Return the beef to the skillet. Add the sauce. Stir and simmer for 2 to 3 minutes until the sauce thickens.

6. Serve over hot cooked rice. Garnish with green onions or sesame seeds if desired.

Notes

Always slice the beef against the grain for tenderness.

Use a mix of red, yellow, and green peppers for more flavor and color.

Swap out white rice with brown or cauliflower rice for a healthier version.
