This Beef Enchilada Casserole is a cheesy, hearty Tex-Mex dinner perfect for weeknights. Made with layers of seasoned ground beef, tortillas, red enchilada sauce, and melty cheese, it’s a comforting casserole that’s easy to prepare, freezer-friendly, and ideal for feeding a hungry family. This casserole recipe is packed with bold Mexican flavors and makes great leftovers too.
Ingredients
2 tablespoons olive oil
1 small onion, diced
2 cloves garlic, minced
1 pound ground beef
2 tablespoons taco seasoning
2 cups red enchilada sauce
12 small corn or flour tortillas
2 cups shredded Mexican blend cheese
Instructions
1. Heat olive oil in a skillet over medium heat. Add diced onion and cook for 3 minutes until softened. Stir in garlic and cook for 30 seconds.
2. Add the ground beef and cook until browned. Drain excess fat. Stir in taco seasoning and 1 cup of enchilada sauce. Let simmer for 5 minutes.
3. Preheat oven to 375°F. Grease a 9×13-inch baking dish. Warm the tortillas to make them pliable.
4. Spread a thin layer of enchilada sauce in the bottom of the dish. Layer tortillas, half the beef mixture, and cheese. Repeat layers, finishing with tortillas, sauce, and cheese.
5. Cover with foil and bake for 20 minutes. Remove foil and bake 10 more minutes until bubbly and golden.
6. Let rest for 5 minutes before slicing and serving.
Notes
This casserole can be made ahead and stored in the fridge for up to 4 days.
Use corn tortillas for a firmer bite, or flour tortillas for a softer texture.
For extra flavor, add black beans or corn into the beef layer.
