Ingredients

1 lb ground beef

1 small onion, finely diced

2 cloves garlic, minced

2 tbsp chili powder

1 tsp cumin

2 tbsp tomato paste

1 1/2 cups chicken or beef broth

8 corn tortillas

1 1/2 cups shredded cheese (cheddar or Mexican blend)

2 tbsp olive oil

1/2 tsp salt

1/4 tsp black pepper


Instructions

1. Heat olive oil in a saucepan and sauté garlic until fragrant.

2. Stir in chili powder, cumin, and tomato paste. Cook for 2 minutes.

3. Gradually whisk in broth until smooth. Simmer 10 minutes until slightly thickened.

4. In a skillet, cook ground beef and diced onion until browned. Drain excess fat.

5. Stir in 3 tablespoons of the red sauce into the beef and simmer 1 minute.

6. Warm tortillas in a skillet or microwave to make them pliable.

7. Fill each tortilla with beef mixture and roll tightly. Place seam-side down in a greased baking dish.

8. Pour remaining red sauce over the enchiladas.

9. Top with shredded cheese evenly.

10. Bake at 375°F for 20 minutes until bubbly and melted. Let rest before serving.

You can make the red sauce up to 2 days ahead.
