Ingredients
1 lb beef sirloin, sliced thin
8 oz mushrooms, sliced
1 medium onion, finely chopped
2 cloves garlic, minced
2 cups beef broth
3/4 cup sour cream
1 tablespoon Dijon mustard
2 teaspoons Worcestershire sauce
3 tablespoons butter
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
12 oz egg noodles
2 tablespoons fresh parsley, chopped (for garnish)
Instructions
1. Slice the beef into thin strips and season with salt and pepper.
2. In a large skillet, melt 1 tablespoon of butter over medium-high heat. Sear the beef in batches until browned, then transfer to a plate.
3. Add another tablespoon of butter to the pan and cook the onions and mushrooms until softened and golden.
4. Add garlic and cook for 30 seconds until fragrant.
5. Sprinkle flour over the mushroom mixture and stir for 1 minute to cook the raw flavor out.
6. Slowly pour in the beef broth while stirring constantly to avoid lumps.
7. Stir in Worcestershire sauce and Dijon mustard. Simmer the sauce until slightly thickened.
8. Lower the heat and mix in the sour cream until smooth and creamy.
9. Return the seared beef to the skillet and coat with the sauce. Let it heat through gently.
10. Meanwhile, cook the egg noodles according to the package instructions.
11. Serve the beef and sauce over the noodles and garnish with fresh parsley.

If reheating, use low heat and add a splash of broth to loosen the sauce.
