Ingredients
1 ½ cups vanilla wafer crumbs
6 tablespoons unsalted butter, melted
3 (8 oz) blocks cream cheese, softened
1 cup granulated sugar
1 cup mashed ripe bananas (about 2 medium bananas)
3 large eggs
½ cup sour cream
2 teaspoons vanilla extract
1 cup heavy cream (for topping)
2 tablespoons powdered sugar (for topping)
1 banana, sliced (for garnish, optional)
Instructions
1. Preheat the oven to 325°F (163°C).
2. Combine vanilla wafer crumbs and melted butter. Press into the bottom of a 9-inch springform pan. Bake for 10 minutes and set aside to cool.
3. In a large bowl, beat cream cheese and sugar until smooth. Add mashed bananas, eggs, sour cream, and vanilla. Mix until well combined.
4. Pour filling into the cooled crust. Bake for 60 to 70 minutes, or until center is just set. Turn off oven, crack the door, and let cheesecake cool inside for 1 hour.
5. Chill in the fridge for at least 6 hours or overnight.
6. Whip heavy cream and powdered sugar to stiff peaks. Spread or pipe onto chilled cheesecake.
7. Garnish with banana slices before serving, if desired.
