2 large boneless skinless chicken breasts

1/2 cup all-purpose flour

3 tablespoons unsalted butter

2 tablespoons olive oil

3 cloves garlic, minced

1/2 cup chicken broth

1/4 cup fresh lemon juice

2 tablespoons chopped fresh parsley

Instructions

1. Slice each chicken breast in half horizontally to create thin cutlets. Season both sides with salt and pepper, then dredge in flour until coated.

2. In a large skillet, heat 1 tablespoon olive oil and 1 tablespoon butter over medium-high heat. Cook the chicken until golden on both sides, about 3–4 minutes per side. Remove and set aside.

3. In the same skillet, add 1 tablespoon butter and sautée the minced garlic until fragrant, about 30 seconds.

4. Pour in chicken broth and lemon juice, scraping up the browned bits from the bottom of the pan.

5. Stir in capers and let the sauce simmer for 2–3 minutes to thicken slightly.

6. Return the chicken to the skillet, spoon the sauce over each piece, and let it simmer for another 2–3 minutes.

7. Turn off heat and sprinkle with fresh chopped parsley before serving.
