Description
Crispy Garlic Butter Hasselback Potatoes are the perfect side dish for any occasion. Thinly sliced russets baked with rich garlic butter until golden brown and tender inside. A simple, elegant, and delicious potato recipe that’s always a crowd favorite. Great for dinner parties, holidays, or comfort food nights.
Ingredients
4 medium Russet potatoes
4 tablespoons unsalted butter
2 tablespoons olive oil
3 cloves garlic, finely minced
1 teaspoon salt
½ teaspoon black pepper
1 tablespoon chopped fresh parsley
2 tablespoons grated Parmesan cheese (optional)
Instructions
1. Wash and scrub the potatoes thoroughly, then dry completely. Leave the skin on.
2. Place each potato between two wooden spoons or chopsticks. Slice across the potato in thin cuts, stopping about ¾ of the way down to keep slices connected.
3. In a small saucepan, melt the butter with the olive oil over medium heat. Add garlic and sauté for 1–2 minutes until fragrant. Do not brown the garlic. Remove from heat.
4. Place potatoes on a parchment-lined baking tray. Brush each potato generously with garlic butter, making sure to get in between the slices. Sprinkle with salt and pepper.
5. Bake at 425°F for 45 minutes. Remove, baste again with garlic butter, and sprinkle Parmesan if using. Return to oven for another 15–20 minutes until edges are golden and crisp.
6. Remove from oven and let rest for 5 minutes. Garnish with chopped parsley and serve hot.
Notes
These potatoes are best served fresh out of the oven.
You can swap Russets for Yukon Golds if you want a creamier texture.
For extra flavor, add a pinch of smoked paprika or Italian herbs.
