Ingredients

1 roll chocolate chip cookie dough

1 cup caramel sauce

1½ cups sweetened shredded coconut

½ cup semi-sweet chocolate chips

2 tablespoons heavy cream

¼ teaspoon sea salt (optional)


Instructions

1. Preheat oven to 350°F. Grease a 9-inch pie dish and let cookie dough soften if using store-bought.

2. Press the dough into the dish, covering the bottom and slightly up the sides to form the crust.

3. Bake the crust for 15–18 minutes until golden at the edges. Let it cool completely.

4. Spread shredded coconut on a baking sheet and toast in the oven for 5 minutes, stirring once.

5. Warm caramel sauce in a saucepan, then stir in the toasted coconut. Spread over the cooled cookie crust.

6. Melt chocolate chips with heavy cream until smooth. Drizzle over the top of the pie.

7. Chill the pie in the fridge for at least 30 minutes before slicing and serving.

Notes

Let the cookie crust cool completely before layering to avoid melting the caramel.

Store leftovers in the refrigerator in a sealed container for up to 5 days.

For an extra treat, top with vanilla ice cream just before serving.
