Better Than Starbucks Egg Bites are creamy, protein-packed breakfast bites made with eggs, cottage cheese, cheddar, and bacon for an easy make-ahead breakfast that is fluffy, savory, and perfect for busy mornings.
Ingredients
6 large eggs
1 cup cottage cheese
1 cup shredded cheddar cheese
6 slices cooked bacon, chopped
2 tablespoons sliced green onions
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon hot sauce
nonstick spray or a little oil for the pan
Instructions
1. Preheat the oven to 300°F and grease a 12 cup muffin tin well.
2. Add the eggs, cottage cheese, salt, black pepper, and hot sauce to a blender and blend until completely smooth.
3. Divide the chopped bacon, shredded cheddar, and green onions evenly among the muffin cups.
4. Pour the egg mixture into each cup until about three quarters full.
5. Bake for 22 to 28 minutes, until the centers are just set and the tops are lightly puffed.
6. Let the egg bites cool in the pan for 5 minutes, then gently remove and serve warm.
Notes
Use full-fat cottage cheese for the creamiest texture.
Do not overbake or the egg bites can turn firm instead of tender.
These reheat well, so they are excellent for breakfast meal prep.
