Ingredients
2 ¼ teaspoons active dry yeast
½ cup warm water
¼ cup granulated sugar
1 box vanilla or funfetti cake mix (15.25 oz)
1 teaspoon salt
2 large eggs
½ cup unsalted butter, melted
4 cups all-purpose flour
2 tablespoons softened butter (for filling)
2 tablespoons granulated sugar (for filling)
1 tablespoon cinnamon
¼ cup additional dry cake mix (for filling, optional)
2 tablespoons rainbow sprinkles (for filling and topping)
1 ½ cups powdered sugar
2 tablespoons milk
1 teaspoon vanilla extract
Instructions
1. In a large bowl, mix warm water and sugar, then sprinkle in the yeast. Let sit 5–10 minutes until foamy.
2. Add eggs, melted butter, cake mix, salt, and flour to the yeast mixture. Mix and knead until smooth. Let rise for 1 hour.
3. Roll the dough into a rectangle. Spread with softened butter, then sprinkle with sugar, cinnamon, and optional extra cake mix and sprinkles.
4. Roll up the dough and cut into 12 even slices. Place in a greased pan. Let rise for another 30 minutes.
5. Bake at 350°F for 20 minutes or until golden.
6. Make glaze by whisking powdered sugar, milk, and vanilla. Drizzle over warm rolls. Top with sprinkles and serve.
