Description

These sweet and fluffy Blueberry Biscuits are the ultimate breakfast or brunch treat. Perfect for weekends, holidays, or everyday comfort food, this easy biscuit recipe features fresh or frozen blueberries, buttery layers, and a golden crust.


Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

3 tablespoons granulated sugar

1/2 teaspoon salt

1/2 cup unsalted butter, cold and cubed

3/4 cup cold buttermilk

1 cup fresh or frozen blueberries

1 teaspoon vanilla extract (optional, for glaze)

1/2 cup powdered sugar (optional, for glaze)

1 to 2 tablespoons milk or cream (optional, for glaze)


Instructions

1. Preheat oven to 425°F. Line a baking sheet with parchment paper or silicone baking mat.

2. In a large bowl, whisk together flour, baking powder, sugar, and salt until combined.

3. Cut in the cold cubed butter using a pastry cutter or fingertips until the mixture resembles coarse crumbs.

4. Pour in buttermilk and stir gently until the dough just comes together. Fold in the blueberries carefully.

5. Transfer dough to a floured surface and press into a 1-inch thick rectangle. Cut out biscuits with a round cutter.

6. Place biscuits on the baking sheet. Arrange close for soft sides or apart for crisp edges.

7. Bake for 15–18 minutes or until golden brown.

8. Optional: Mix powdered sugar, milk or cream, and vanilla to create glaze. Drizzle over warm biscuits before serving.

Notes

These biscuits are best served warm the day they’re baked.

If using frozen blueberries, do not thaw before mixing into the dough.

You can skip the glaze for a more traditional, less sweet biscuit.
