Ingredients
1 cup cottage cheese
2 large eggs
1/4 cup maple syrup
1 teaspoon vanilla extract
1 cup rolled oats
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 cup blueberries (fresh or frozen)
Instructions
1. Preheat oven to 375°F and grease an 8×8-inch baking dish or line it with parchment paper.
2. In a large bowl, whisk together cottage cheese, eggs, maple syrup, and vanilla extract until smooth.
3. Add rolled oats, baking powder, cinnamon, and salt. Stir until combined.
4. Gently fold in the blueberries, reserving a few for topping.
5. Pour the mixture into the baking dish and smooth the top. Sprinkle with remaining blueberries.
6. Bake for 35-40 minutes, or until the center is set and edges are golden.
