Description

Ingredients

1 can Rotel tomatoes, drained

8 oz cream cheese, softened

1 cup sour cream

1 packet ranch seasoning mix

1 cup shredded cheddar cheese

1 can corn, drained

2 tablespoons diced jalapeños (optional)


Instructions

1. Let the cream cheese sit at room temperature for 15 minutes to soften.

2. Drain the Rotel tomatoes and canned corn thoroughly.

3. In a large bowl, mix together cream cheese, sour cream, ranch seasoning, Rotel, corn, cheddar cheese, and jalapeños if using.

4. Stir until the mixture is smooth and well-combined.

5. Cover and refrigerate for at least 1 hour before serving.

Notes

Letting the cream cheese soften first makes the mixing process much smoother.
