Ingredients
1 cup cream cheese
3/4 cup granulated sugar
3 large eggs
1 teaspoon vanilla extract
1/2 cup sour cream
1 prepared sponge cake base (homemade or box mix)
1 cup whole milk
2 tablespoons cornstarch
2 tablespoons unsalted butter
1/2 cup semi-sweet chocolate chips
1/3 cup heavy cream
2 egg yolks
Instructions
1. Prepare the sponge cake and bake in a springform pan. Let cool.
2. Beat cream cheese until smooth. Add sugar, eggs, sour cream, and vanilla. Mix until creamy.
3. Pour cheesecake filling over the sponge cake base and bake until the center jiggles slightly. Chill 4+ hours.
4. For the custard: cook milk, cornstarch, sugar, and egg yolks until thick. Remove from heat, stir in butter and vanilla. Cool completely.
5. Spread cooled custard over the cheesecake.
6. Heat cream and pour over chocolate chips. Stir into a ganache and spread over the custard. Chill until set.
7. Slice with a warm knife for clean cuts. Serve slightly chilled or at room temperature.
