Description

This Budget Ground Beef and Cabbage Casserole is a cozy, affordable weeknight dinner made with ground beef, cabbage, tomato sauce, and rice. A simple, hearty casserole recipe perfect for meal prepping and family meals.


Ingredients

1 lb ground beef

1 small head green cabbage, chopped

2 cups cooked rice

1 medium onion, diced

2 cloves garlic, minced

2 cups tomato sauce

1 tbsp olive oil

1 tsp salt

½ tsp black pepper

1 cup shredded cheese (optional)


Instructions

1. In a large skillet, heat olive oil over medium heat and sauté diced onion until soft, about 4 minutes. Add garlic and cook another 30 seconds.

2. Add ground beef to the skillet, cooking until browned. Drain excess fat and season with salt and pepper.

3. Stir chopped cabbage into the beef mixture and cook until slightly wilted, about 5 minutes.

4. Add the cooked rice and tomato sauce to the skillet. Mix thoroughly and adjust seasoning to taste.

5. Preheat oven to 375°F. Transfer the mixture to a greased 9×13 casserole dish.

6. If using cheese, sprinkle over the top. Cover with foil and bake for 25 minutes.

7. Remove foil and bake an additional 10 minutes, until bubbly and golden.

8. Let rest for 5 minutes before serving.

Notes

Cabbage shrinks as it cooks, so don’t worry if it fills the pan at first.

You can use brown rice for extra fiber and a nuttier flavor.

This casserole freezes beautifully — perfect for batch cooking.
