Ingredients

2 boneless skinless chicken breasts

4 tablespoons salted butter

1/2 teaspoon onion powder

1/2 cup heavy cream

2 tablespoons tomato paste

1/2 cup chicken broth

1 tablespoon fresh parsley, chopped


Instructions

1. Season chicken with salt, paprika, and onion powder.

2. In a large skillet over medium-high heat, melt 2 tablespoons of butter. Add chicken and sear on both sides until golden, about 3 minutes per side. Remove and set aside.

3. Lower heat to medium. Add remaining butter, garlic, and tomato paste. Stir for 1 minute.

4. Sprinkle in cayenne pepper, then pour in chicken broth to deglaze the pan, scraping the bottom.

5. Add heavy cream and stir to combine. Bring to a gentle simmer.

6. Return chicken to skillet and simmer for 10 minutes until the sauce thickens and the chicken is cooked through.

7. Garnish with fresh parsley and serve hot over mashed potatoes, rice, or bread.

Notes

This dish tastes even better the next day after the flavors meld.

You can swap chicken breasts with thighs for more tenderness.
