Description
This heavenly chicken mushroom pasta is creamy, comforting, and full of flavor. Tender chicken, earthy mushrooms, and a luscious Parmesan sauce make it a perfect weeknight dinner and a go-to comfort meal.
Ingredients
12 ounces pasta
1 pound chicken breast or thighs, cut into bite-sized pieces
8 ounces mushrooms, sliced
3 cloves garlic, minced
2 tablespoons butter
1 tablespoon olive oil
1 cup heavy cream
1 cup freshly grated Parmesan cheese
Salt to taste
Black pepper to taste
Instructions
1. Bring a large pot of salted water to a boil and cook pasta until al dente. Reserve some pasta water and drain.
2. Season chicken with salt and pepper. Heat olive oil and butter in a skillet and sear chicken until golden and cooked through. Remove and set aside.
3. In the same skillet, add mushrooms and cook until browned and moisture evaporates, about 5–7 minutes.
4. Add minced garlic and sauté until fragrant. Pour in heavy cream and simmer gently. Stir in Parmesan until creamy.
5. Return chicken to skillet, add pasta, and toss everything together. Add a splash of reserved pasta water if needed. Serve hot with extra Parmesan and black pepper.
Notes
You can use any type of mushrooms — cremini, button, or a mix for more depth.
Reserve pasta water to adjust sauce consistency as needed.
For extra flavor, garnish with fresh parsley or a squeeze of lemon before serving.
