Ingredients

2 large chicken breasts, boneless and skinless, cut into bite-sized pieces

1.5 tablespoons Cajun seasoning

1 tablespoon olive oil

2 tablespoons butter

3 garlic cloves, minced

1.5 cups heavy cream

1 cup freshly grated Parmesan cheese

2 tablespoons fresh parsley, chopped

1 teaspoon fresh thyme leaves

1 teaspoon salt (or to taste)

0.5 teaspoon black pepper

12 ounces twist pasta (such as rotini or fusilli)


Instructions

1. Toss the chicken pieces in Cajun seasoning until evenly coated.

2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 6–8 minutes until golden and fully cooked. Remove and set aside.

3. Boil pasta in salted water according to package directions. Drain and set aside.

4. In the same skillet, melt butter and sautée minced garlic for 1–2 minutes until fragrant.

5. Pour in heavy cream and bring to a gentle simmer.

6. Stir in Parmesan cheese and allow it to melt fully into the sauce.

7. Mix in fresh parsley and thyme. Season with salt and pepper.

8. Add the cooked pasta and chicken back into the skillet.

9. Toss to coat everything well in the sauce.

10. Serve hot, garnished with more Parmesan or herbs if desired.

Notes

You can adjust the level of spice by increasing or reducing the Cajun seasoning.

Freshly grated Parmesan melts better and gives better flavor than pre-shredded.

A splash of milk or cream while reheating helps bring the sauce back to life.
