Description

This Cajun Chicken Jambalaya recipe is a hearty one-pot meal bursting with Southern flavors of smoky andouille sausage, tender chicken, colorful peppers and onions, and a bold kick of Cajun spice. Perfect for family dinners or casual gatherings, it feeds up to 6 people and keeps well for leftovers or meal prep.


Ingredients

6 chicken thighs

12 oz andouille sausage

1 1/2 cups long grain rice

1 red bell pepper

1 green bell pepper

1 onion

2 ribs celery

4 cloves garlic

2 tbsp Cajun seasoning

3 cups chicken broth

1 can diced tomatoes


Instructions

1. Heat oil in a large pot or Dutch oven over medium-high heat. Season chicken with salt and pepper and sear until browned on both sides. Remove and set aside.

2. Add sliced andouille sausage to the pot, cook until browned, then remove and set aside with the chicken.

3. In the same pot, sauté onion, bell peppers, and celery until softened, about 5 minutes. Add garlic and cook another minute.

4. Stir in Cajun seasoning, coating vegetables evenly. Add rice, diced tomatoes, and chicken broth. Stir to combine.

5. Return chicken and sausage to the pot. Bring to a boil, reduce heat to low, cover, and simmer for 25–30 minutes or until rice is tender and liquid is absorbed.

6. Fluff rice with a fork, garnish with parsley or green onions, and serve hot.

Notes

Adjust the Cajun seasoning to your spice preference.

Use smoked kielbasa or spicy chorizo if andouille isn’t available.

Add a splash of chicken broth when reheating to keep rice moist.
