Description

Ingredients

340g rotini pasta

500g boneless, skinless chicken breasts

2 tbsp Cajun seasoning

3 cloves garlic, minced

2 tbsp butter

1 ½ cups heavy cream

1 cup shredded mozzarella cheese

1 cup cubed Velveeta cheese

½ tsp salt

½ tsp ground black pepper

1 tbsp olive oil


Instructions

1. Boil a large pot of salted water. Cook rotini pasta until al dente. Drain and reserve 1 cup of pasta water.

2. Season chicken with Cajun seasoning. Heat olive oil in a skillet and cook chicken until golden and cooked through. Set aside.

3. In the same skillet, melt butter and sauté minced garlic for 1 minute.

4. Pour in heavy cream, add Velveeta cubes. Stir until melted.

5. Add shredded mozzarella and stir until sauce is creamy. Season with salt and pepper.

6. Return chicken and pasta to the skillet. Stir to combine. Add pasta water to loosen the sauce if needed.

7. Simmer for 2–3 minutes to blend flavors. Serve hot with optional parsley garnish.

Notes

Use rotini or any spiral pasta to hold the creamy sauce well.

Add more Cajun seasoning for a spicier version.
