Ingredients
12 oz spaghetti
2 large chicken breasts
2 tablespoons Cajun seasoning
1 tablespoon olive oil
2 tablespoons butter
4 garlic cloves, minced
1 cup heavy cream
1 ½ cups shredded mozzarella cheese
¼ cup grated Parmesan cheese
¾ cup chicken broth
Salt and pepper to taste
2 tablespoons fresh parsley, chopped
Instructions
1. Season chicken slices with Cajun seasoning on all sides.
2. In a large skillet, heat olive oil and sear chicken until golden and fully cooked. Remove and set aside.
3. Bring a large pot of salted water to boil and cook spaghetti until al dente. Drain, reserving 1 cup of pasta water.
4. In the same skillet, melt butter and sauté minced garlic until fragrant.
5. Pour in chicken broth and heavy cream, stirring well.
6. Add mozzarella and Parmesan cheese, stirring until the sauce is smooth and melted.
7. Return chicken to the skillet and add the cooked spaghetti. Toss everything to coat.
8. Add reserved pasta water gradually if sauce needs thinning.
9. Season with salt and pepper to taste.
10. Garnish with fresh parsley and serve immediately.
Notes
Use freshly grated mozzarella for the smoothest melt.
Don’t overcook the pasta—al dente holds the sauce better.
Reserve pasta water always—it’s liquid gold for adjusting sauce.
