Ingredients
2 chicken breasts
12 oz cheese tortellini
3 garlic cloves, minced
1 ½ tablespoons Cajun seasoning
2 tablespoons butter
1 tablespoon olive oil
1 cup heavy cream
½ cup grated Parmesan cheese
½ cup shredded mozzarella cheese
3 oz cream cheese
Salt and pepper to taste
2 tablespoons fresh parsley, chopped
Instructions
1. Cut the chicken breast into bite-sized chunks and season with Cajun seasoning, salt, and pepper.
2. Bring a large pot of salted water to a boil and cook the tortellini according to the package directions. Drain and reserve ½ cup of pasta water.
3. Heat butter and olive oil in a large skillet over medium-high heat. Sear chicken until browned and cooked through. Remove and set aside.
4. In the same skillet, lower heat and sautée the garlic until fragrant. Stir in the heavy cream and bring to a simmer.
5. Add cream cheese, Parmesan, and mozzarella. Whisk until fully melted and smooth.
