Ingredients
1 cup butter
2 cups all-purpose flour
1 cup brown sugar
1/2 cup quick oats
16 oz cream cheese
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 cups chopped apples
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup caramel sauce
Instructions
1. Preheat the oven to 350°F and line a 9×13-inch pan with parchment paper.
2. Mix 1 cup melted butter, 1 cup flour, and 1/2 cup brown sugar. Press into the pan and bake for 15 minutes.
3. Beat cream cheese and granulated sugar until smooth. Add eggs and vanilla, mixing to combine.
4. Pour the cheesecake mixture over the baked crust.
5. Toss chopped apples with cinnamon and nutmeg. Spread evenly over cheesecake layer.
6. In a bowl, combine 1 cup flour, 1/2 cup brown sugar, 1/2 cup oats, and 1/2 cup butter. Crumble on top.
7. Bake for 35 to 40 minutes until golden and set.
8. Cool completely, chill for 3 hours, then slice and drizzle with caramel sauce.
Notes
These bars are best served chilled for clean slices.
For extra crunch, add chopped pecans to the streusel.
Use full-fat cream cheese for a richer cheesecake texture.
