Ingredients
2 large yellow onions
2 tablespoons butter
1 tablespoon olive oil
1 teaspoon salt
½ teaspoon black pepper
1 ½ cups shredded Gruyere cheese
8 ounces cream cheese, softened
½ cup sour cream
2 cloves garlic, minced
1 teaspoon fresh thyme leaves
Instructions
1. Slice the onions thinly and sauté them in butter and olive oil over medium-low heat. Stir occasionally and cook for 30 to 40 minutes until they are deeply caramelized and golden brown.
2. In a large mixing bowl, combine the cream cheese, sour cream, garlic, and thyme. Mix until smooth.
3. Fold in 1 cup of the Gruyere cheese, saving ½ cup for topping.
4. Let the caramelized onions cool slightly, then fold them into the cheese mixture.
5. Spread the dip into a baking dish and top with the remaining Gruyere.
6. Bake at 375°F for 20 minutes until bubbly and golden.
7. Serve hot with toasted baguette, chips, or vegetables.
