Instructions

1. Slice the beef liver into even pieces and soak in milk for 20 to 30 minutes, then drain and pat dry

2. Caramelize the onions slowly in butter and olive oil until golden and soft

3. Cook the liver briefly in the same skillet, seasoning with salt and black pepper

4. Combine the onions and liver and rest briefly before serving

Notes

Do not overcook the liver or it will become tough

Soaking in milk helps mellow the flavor
