Ingredients

1 lb beef sirloin or ribeye, thinly sliced

1 tbsp olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 cup beef broth

1 tbsp Worcestershire sauce

1/2 tsp salt

1/2 tsp black pepper

1 cup heavy cream

1 1/2 cups shredded provolone cheese

1/4 cup grated Parmesan cheese

1 (20 oz) package cheese tortellini

1 tbsp butter

1 tsp Italian seasoning

Chopped fresh parsley, for garnish


Instructions

  1. Cook the Beef: Heat olive oil in a skillet over medium-high heat. Add sliced beef and cook until browned (3-4 minutes). Remove and set aside.
  2. Sauté the Aromatics: In the same skillet, melt butter and cook onions until soft (about 2 minutes). Stir in garlic and cook for another 30 seconds.
  3. Create the Sauce Base: Add beef broth and Worcestershire sauce, scraping up any browned bits. Let simmer for 2-3 minutes. Stir in heavy cream and Italian seasoning.
  4. Melt the Cheese: Reduce heat to low and add provolone and Parmesan cheese, stirring until smooth. Season with salt and pepper.
  5. Cook the Tortellini: Boil cheese tortellini in salted water according to package directions. Drain and set aside.
  6. Combine Everything: Return the beef to the skillet and stir to coat. Add drained tortellini and toss until evenly covered in sauce.
