Ingredients

12 oz linguine

2 boneless skinless chicken breasts, sliced into strips

3 tablespoons salted butter

4 garlic cloves, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1 tablespoon olive oil

1 teaspoon salt

½ teaspoon black pepper


Instructions

1. Boil a large pot of salted water and cook the linguine until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.

2. In a large skillet, heat 1 ½ tablespoons of butter and the olive oil over medium heat. Add sliced chicken, season with salt and pepper, and sear until golden and cooked through. Remove and set aside.

3. In the same skillet, add the remaining butter and minced garlic. Sauté until fragrant, being careful not to brown the garlic.

4. Pour in the heavy cream and bring to a gentle simmer. Stir in Parmesan and mozzarella until the sauce becomes thick and creamy.

5. Add cooked linguine and the chicken to the skillet. Toss everything together to coat well. Add a splash of reserved pasta water if the sauce needs thinning.

6. Serve immediately with extra Parmesan or chopped parsley on top.

Notes

You can substitute fettuccine or penne if linguine isn’t available.

Chicken thighs add extra richness if preferred over breasts.

For a lighter option, use half-and-half instead of heavy cream.
