Ingredients
2 cups bowtie pasta
1 pound boneless chicken breast, diced
4 cloves garlic, minced
3 tablespoons butter
1 tablespoon olive oil
1 cup heavy cream
1 cup fresh mozzarella, chopped or torn
½ cup parmesan cheese, grated
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon Italian seasoning
2 tablespoons fresh parsley, chopped
Instructions
1. Bring a large pot of salted water to a boil. Cook bowtie pasta until al dente. Reserve 1 cup of pasta water, then drain and set aside.
2. In a skillet, heat olive oil and 1 tablespoon of butter over medium-high heat. Season chicken with salt, pepper, and Italian seasoning. Cook until golden and fully done. Set aside.
3. Reduce heat. Add the rest of the butter to the skillet. Stir in minced garlic and cook for 1 minute until fragrant.
4. Pour in heavy cream and simmer. Add mozzarella and parmesan. Stir until cheese melts and sauce thickens. Add reserved pasta water as needed.
5. Return pasta and chicken to the skillet. Toss everything to coat evenly in the sauce. Simmer for 2 more minutes.
6. Garnish with parsley and more parmesan if desired. Serve hot.
Notes
This dish is best served fresh, but leftovers can be refrigerated for up to 3 days.
Add a pinch of red pepper flakes if you like a hint of heat.
Swap bowties with penne or rotini for variety.
