Ingredients

12 ounces bowtie pasta

1 pound boneless skinless chicken breasts, cut in 1-inch pieces

1 1/2 tablespoons Cajun seasoning

4 cloves garlic, minced

2 tablespoons unsalted butter

1 tablespoon olive oil

1 1/2 cups heavy cream

1 cup freshly grated Parmesan cheese

1 cup shredded low-moisture mozzarella

1/2 teaspoon kosher salt

1/4 teaspoon black pepper

1/2 cup reserved pasta water, as needed

2 tablespoons chopped fresh parsley, for garnish


Instructions

1. Bring a large pot of salted water to a boil. Cook bowtie pasta until al dente. Reserve 1/2 cup pasta water, drain, and set aside.

2. Pat chicken dry. Toss with Cajun seasoning, salt, and pepper. Heat olive oil in a large skillet over medium-high. Sear chicken 5 to 6 minutes per side until cooked through. Transfer to a plate.

3. Lower heat to medium. Add butter to the same skillet. Stir in garlic and cook 30 to 60 seconds until fragrant.

4. Pour in heavy cream. Simmer 3 to 4 minutes, scraping up browned bits.

5. Reduce heat to low. Stir in Parmesan and mozzarella until smooth and creamy. Adjust seasoning to taste.

6. Add cooked pasta and chicken to the sauce. Loosen with splashes of reserved pasta water until glossy and well coated.

7. Garnish with parsley and extra Parmesan. Serve hot.

Notes

Let the skillet cool slightly before adding cream so the sauce stays smooth.

Use more or less Cajun seasoning to fit your heat preference.

Leftovers reheat best with a splash of milk or cream.
