Ingredients

1 lb steak, cut into bite-sized pieces

1 tsp salt

1 tsp black pepper

2 tbsp olive oil

2 tbsp butter

4 cloves garlic, minced

1 tsp Italian seasoning

12 oz linguine pasta

1 ½ cups heavy cream

1 cup grated parmesan cheese

1 cup shredded mozzarella cheese

2 tbsp chopped parsley

½ cup reserved pasta water


Instructions

1. Cook the linguine pasta in salted boiling water until al dente. Reserve ½ cup pasta water and drain the rest.

2. Cut steak into bite-sized pieces. Season with salt, pepper, and Italian seasoning.

3. Heat olive oil in a skillet over high heat. Sear steak bites in batches for 1-2 minutes per side. Remove and set aside.

4. Reduce skillet heat to medium. Add butter and garlic; cook until fragrant, about 30 seconds.

5. Return steak to skillet and toss to coat in garlic butter.

6. In a saucepan, heat heavy cream over medium heat until simmering.

7. Stir in parmesan and mozzarella cheese until melted and smooth. Use pasta water to thin if needed.

8. Toss cooked linguine in the cheese sauce until evenly coated.

9. Plate the pasta, top with steak bites, and drizzle garlic butter over top.

10. Garnish with chopped parsley and serve hot.

Notes

Use sirloin or ribeye for best tenderness and sear.

Add a splash of milk or cream when reheating to keep the sauce silky.

Don’t overcrowd steak while searing to maintain a golden crust.
