Ingredients

1 lb ground beef

1 small yellow onion, finely chopped

2 cloves garlic, minced

2 tbsp taco seasoning

1 tbsp tomato paste

1/4 cup water

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

4 large flour tortillas

2 tbsp butter or oil for cooking


Instructions

1. In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a spoon. Drain excess fat.

2. Add chopped onion and garlic to the skillet. Sauté for 3 minutes until soft and fragrant.

3. Stir in taco seasoning, tomato paste, and water. Let simmer for 5 minutes until thickened. Remove from heat.

4. Lay a tortilla flat and sprinkle cheese on one half. Add some beef mixture, then more cheese. Fold tortilla in half.

5. Heat a skillet with a little butter or oil over medium heat. Toast each quesadilla for 2-3 minutes per side until golden and cheese is melted.
