2 cups pasta

1 small onion, chopped

2 cloves garlic, minced

1 cup pumpkin puree

1 can (14.5 ounces) diced tomatoes

1 teaspoon Italian seasoning

1 teaspoon salt

½ teaspoon black pepper

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese


Instructions

1. Bring a large pot of salted water to a boil. Cook pasta until just under al dente. Drain and set aside.

2. In a large skillet, heat olive oil over medium heat. Sauté chopped onion until soft, about 5 minutes.

3. Add minced garlic and cook for 1 minute until fragrant.

4. Stir in pumpkin puree and diced tomatoes (with juice). Mix to combine.
